Ingredients
Start here, then move straight into the method.
- 4 egg whites (separated from yolks)
- 1 teaspoon vanilla
- 1 teaspoon lemon zest
- 1 cup sugar
- 1 level tablespoon (tbsp) flour
- 1 teaspoon baking powder
- 2 1/2 cups shredded coconut
- melted butter or oil for shaping the dough

Method
Follow the cooking sequence without leaving the page.
- With an electric mixer, whip the egg whites (without yolks) with vanilla and lemon zest until the mixture doubles and becomes like whipped cream.
- Add the sugar and continue whipping until it dissolves.
- Add the flour and baking powder and continue whipping until combined.
- Stir in the desiccated coconut with a spoon until you have a soft batter.
- Place the mixture in a nonstick pan over very low heat and stir continuously for about 10 minutes only.Timers: 10 min
- Transfer them to a glass bowl, cover with cling film and a clean towel, and let the dough rest for about an hour.
- After the time has passed, form the mixture into balls, then arrange them or press them lightly with the palm of your hand to shape them.
- Place them on parchment paper on a baking tray.
- Bake in a preheated oven at 170°C on the bottom rack for about 12 minutes, watching closely.Timers: 12 min
- When the edges begin to brown, turn on the top heat for 3 minutes so they brown on top, monitoring them.Timers: 3 min
