Ingredients

  • 1 cup sugar
  • 1 cup grated coconut
  • 3 tablespoons custard powder
  • 3 tablespoons starch
  • 3 cups liquid milk
  • or
  • 3 cups water and 1 cup milk powder
  • syrup or sugar syrup, as desired
  • small container of cream or clotted cream
  • pistachios, walnuts, or cashews for garnish

Method

  1. Dissolve the custard powder, starch, and sugar in the milk.
  2. Add the coconut, stir, and place the mixture over the heat until it thickens.
  3. Add the cream and stir well. Sprinkle the pistachios in the bottom of a cake mold, then pour the mixture over it.
  4. When the mixture cools, place the mold in the refrigerator until it sets and firms up.
  5. After the time has passed, invert the mold onto a serving plate.
  6. Drizzle syrup over the Coconut Custard Mold and serve.
