Chocolate and mint cookies are a perfect flavor combination—delicious and simple!
Ingredients
- 1 1/4 cups sugar
- 2 cups all-purpose flour
- 1 egg
- 1 tablespoon fresh mint, finely chopped
- 3/4 cup softened butter
- 1 teaspoon baking soda
- Pinch of salt
- 2 tablespoons chocolate chips

Method
- Cream the softened (or melted) butter with the sugar until light, using a whisk by hand or an electric mixer.
- Add the egg and continue beating until fully combined.
- Stir in the finely chopped fresh mint and mix into the batter.
- Gradually add the flour, baking soda and salt.
- Mix with a wooden spoon, then fold in the chocolate chips until the dough is uniform.
- Scoop about one tablespoon of dough onto a baking tray lined with parchment paper or lightly sprayed with oil.
- Leave enough space between cookies as they will spread while baking.
- Place the tray in a preheated oven and bake the cookies for about 10 minutes.Timers: 10 min
- When you remove the cookies from the oven they will be very soft—let them sit for a few minutes to firm up and cool before transferring them from the tray.
