Ingredients
- Packet of toast bread
- 2 egg yolks
- A pinch of vanilla
- Lemon zest
- 2 tablespoons flour
- 2 tablespoons cornstarch
- 1/2 cup sugar
- 2 cups milk
- 1 teaspoon butter
- Syrup (sugar syrup or shireh):
- 2 cups sugar
- 2 cups water
- Chocolate:
- 200 grams chocolate pieces
- 1/4 cup milk
- For garnish:
- Crushed pistachios

Method

- Beat the egg yolks with vanilla and lemon zest
- In another bowl, whisk the flour, cornstarch, and sugar; then gradually whisk in the milk
- When the mixture thickens, add the egg mixture and cook until it reaches a creamy consistency
- Add butter and stir until melted; remove from heat and cool the cream
- Meanwhile, make the syrup by heating sugar with water until it dissolves and caramelizes, then keep warm
- Arrange the toast slices on a tray, drizzle with hot syrup, and set aside
- Prepare the chocolate: melt chocolate over a double boiler and whisk in 1/4 cup milk
- Fill a pastry bag with the cream and pipe onto the toast circles, leaving centers empty
- Fill the gaps with melted chocolate
- Stack the toasts and decorate with cream and ground pistachios
- Chill the chocolate-cream toast before serving
