Ingredients
- 1 1/2 cups flour
- 3 eggs
- 1/4 cup oil
- 1 cup sugar
- 1/2 cup pineapple juice
- 1/2 cup shredded coconut
- 1 teaspoon vanilla
- 1 tablespoon baking powder
- Lemon zest
- 1 tablespoon white vinegar
- 1/4 teaspoon baking soda
- 1/2 cup melon or dried fruit (optional)
- Chocolate sauce for decorating
- 1/2 cup oil
- 1/2 cup liquid milk
- 1/2 cup sugar
- 1/2 cup cocoa
- 1 packet cream powder + 1/4 cup cold milk
- Method for the decorating sauce:
- In the electric blender, beat 1/2 cup liquid milk, 1/2 cup vegetable oil, 1/2 cup sugar, and 1/2 cup cocoa
- Separately, beat 1/4 cup cold milk with the packet of cream powder
Method
- Using a hand or electric whisk, beat the eggs with the vanilla and lemon zest, then add the sugar after a short while and continue beating until it completely dissolves
- Add the juice and beat, then add the oil and beat well until the cake mixture is combined
- Add the vinegar and mix, then add the dry ingredients. It is preferable to sift the flour beforehand 3 times
- When the mixture is combined, add the shredded coconut and the dried melon (optional) and mix
- Preheat the oven to 180 C and prepare the cake pan. Grease it with a very thin layer of tahini and pour in the Chocolate and Coconut Cake batter
