  • 500 g boneless chicken
  • 1 small onion, finely chopped
  • 3 tablespoons finely chopped parsley
  • 1/2 cup shredded mozzarella
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sweet spice
  • pinch black pepper
  • pinch chili to taste
  • salt
  • 2 tablespoons vegetable oil

  • 1/2 cup yogurt
  • 1 tablespoon tahini
  • 1 clove garlic, crushed

  • 2 cups bread flour
  • 1 tablespoon yeast
  • 1 tablespoon sugar
  • pinch salt
  • Warm water for kneading (about 1 1/2 cups depending on flour)

Method

  1. Grind the chicken with the oil in a blender until smooth.
  2. Remove the chicken from the grinder, add the remaining ingredients, form the mixture into discs like burger patties, and grill them on a grill or non-stick pan until cooked.
  3. Mix well and serve the chicken kofta with the sauce and a parsley-onion-sumac salad
  4. Mix well and knead until a soft dough forms.
  5. Let the dough rest for about an hour to rise, then roll out and cut into circles; let them rest another 30 minutes.
