Ingredients
- 1 kilogram boneless chicken
- Aromatics for poaching the chicken: bay leaves / cinnamon sticks / cloves or star anise / ginger
- 2 carrots
- 2 bell peppers
- 1 cup corn
- 1 cup sliced mushrooms
- 2 medium tomatoes
- 1 small onion
- 2 cups long-grain rice, washed and drained

Method
- Wash the chicken well and poach it with the aromatics. Meanwhile, chop the onion, peppers, and tomatoes into small dice and cut the carrots into half-moons. Sauté the onion in a little oil until soft, then add the carrots, peppers, mushrooms, corn, and tomatoes gradually.
- When the vegetables are half-cooked, add the boneless chicken pieces and spices and toss briefly before adding the rice. Use 2 cups of the chicken poaching liquid for every cup of rice, and once it reaches a boil, simmer over low heat until the rice is cooked.
- Spoon the rice onto a serving dish and garnish with nuts, and serve the whipped yogurt alongside.
- To prepare the whipped yogurt:
- Add a little cold water to two cups of yogurt and whisk with a clove of crushed garlic, a pinch of salt, and a pinch of sweet or hot red pepper.
