Ingredients

  • 1 kg flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 1/2 teaspoons yeast
  • 1 cup yogurt
  • 2 tablespoons vegetable oil or olive oil, as available
  • 1 teaspoon vinegar
  • Warm water for kneading

Method

  1. Place all the dry ingredients over the flour and mix well, then add the yogurt, the oil, and a tablespoon of vinegar and mix well.
  2. Mix until all ingredients are combined, then gradually add the water and knead until you have a soft dough that does not stick to your hand.
  3. Leave the dough to rise for one hour.
  4. Then cut the dough into balls according to the size you want.
  5. Let them rest for 5 minutes before you begin working with them.

  6. Roll out the dough with a rolling pin.
  7. Fill the dough balls with your preferred or available filling, for example Akawi cheese mixed with dried thyme and nigella (black) seeds, with a tablespoon of oil.
  8. Seal the dough as shown in the accompanying photos and score it with a knife.
  9. Let the pastries rise for 15 minutes before baking, then brush the tops with egg yolk mixed with a small teaspoon of vinegar.

  10. Place the pastries in a preheated oven at 180°C on the middle rack for 10 to 15 minutes until the bottoms are baked, then brown the tops.
