Cheese Pastries with a Light, Flaky Dough

- 1 kg flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 1/2 teaspoons yeast
- 1 cup yogurt
- 2 tablespoons vegetable oil or olive oil, as available
- 1 teaspoon vinegar
- Warm water for kneading
Method
- Place all the dry ingredients over the flour and mix well, then add the yogurt, the oil, and a tablespoon of vinegar and mix well.
- Mix until all ingredients are combined, then gradually add the water and knead until you have a soft dough that does not stick to your hand.
- Leave the dough to rise for one hour.
- Then cut the dough into balls according to the size you want.
- Let them rest for 5 minutes before you begin working with them.Timers: 5 min
- Roll out the dough with a rolling pin.
- Fill the dough balls with your preferred or available filling, for example Akawi cheese mixed with dried thyme and nigella (black) seeds, with a tablespoon of oil.
- Seal the dough as shown in the accompanying photos and score it with a knife.
- Let the pastries rise for 15 minutes before baking, then brush the tops with egg yolk mixed with a small teaspoon of vinegar.Timers: 15 min
- Place the pastries in a preheated oven at 180°C on the middle rack for 10 to 15 minutes until the bottoms are baked, then brown the tops.Timers: 15 min
