Cheese kunafa — a very popular dessert, often served for breakfast

Ingredients

  • Kunafa base (crumb):
  • 2 cups fine semolina
  • 2 tablespoons sugar
  • 1 cup milk (liquid)
  • 1 tablespoon ghee
  • 1 tablespoon orange blossom water
  • Cheese filling:
  • 2 cups milk (liquid)
  • 1/2 cup fine semolina
  • 1/2 kg sweetened, well-drained akkawi cheese (or other sweetened white cheese), thoroughly drained

Method

  1. Begin preparing the kunafa crust: mix the semolina with ghee and rub together slightly.
  2. Add the sugar and milk and knead.
  3. Place the kunafa crust in a pan and bake it for only 10 minutes until it dries.
  4. Set it aside to cool, then put it in a blender with orange blossom water and grind.
  5. Start preparing the cheese filling: heat the liquid milk with semolina, stirring constantly until it thickens.
  6. Add the cheese and stir very quickly until the mixture becomes elastic.
  7. When the cheese is completely melted, allow the filling to cool slightly.
  8. Meanwhile, spread the prepared kunafa crust from the first stage into a pan, press it down, and brown the bottom over the gas stove while turning the pan constantly so it browns evenly on all sides.
  9. Spread the cheese evenly over the crust.
  10. Invert the pan onto a larger serving plate and soak it with warm syrup, then serve the cheese kunafa immediately.
