Method
- Grate the cheese and soak it in clean water, then drain; repeat several times until the saltiness is completely removed and the cheese tastes mild.
- Drain the cheese well, then heat it in a pot over the stove until it melts.
- Grease the baking pan with ghee and press the kunafa crust (fark) well by hand. Place the pan over high heat on the gas until the bottom of the crust browns; when the edges turn golden you have reached the desired color.
- Spread the melted cheese over the kunafa crust, then invert the kunafa pan onto a serving plate and pour the syrup (attar) over it while hot.
- Garnish the cheese kunafa with pistachios and serve hot.
