Ingredients
- The dough:
- 1 kilo all-purpose flour
- Fresh yeast (if available) or 1 tablespoon instant yeast granules
- 1 teaspoon salt
- 2 tablespoons sugar
- 1 cup warm milk
- 1 cup buttermilk, 150 g
- 2 tablespoons vinegar
- 1/4 cup vegetable oil
- 1 very small teaspoon baking powder
- Cheese filling:
- 400 g feta cheese
- 2 tablespoons olive oil
- A pinch of red chili pepper
- A pinch of dried mint or oregano
Method
- In a mixing bowl, combine the dry dough ingredients and mix well, except for the yeast and sugar.
- Make a well in the center and add the yeast, sugar, and 1 cup warm milk (not hot). Stir and leave it in the center to activate the yeast.
- Then add the vinegar, buttermilk, and oil, and begin kneading until you get a soft, smooth, and cohesive dough.
- Let it rise for 1 hour, then start working with it.Timers: 60 min
- After the dough has risen, divide it, roll it out, and fill it with the cheese filling after mixing the crumbled feta by hand or with a fork with the other ingredients.
- Shape the pieces again into balls and arrange them side by side in an oiled baking tray.
- Cover and let rest for a short time.
- Brush the top with liquid milk or sprinkle with water, then place in a hot oven until golden brown.
- Remove from the oven after browning and cover immediately with a clean kitchen towel to keep the honeycomb buns soft. Cover for 15 minutes.Timers: 15 min
- Serve the feta cheese honeycomb buns immediately.
