Ingredients

  • The dough:
  • 1 kilo all-purpose flour
  • Fresh yeast (if available) or 1 tablespoon instant yeast granules
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup warm milk
  • 1 cup buttermilk, 150 g
  • 2 tablespoons vinegar
  • 1/4 cup vegetable oil
  • 1 very small teaspoon baking powder
  • Cheese filling:
  • 400 g feta cheese
  • 2 tablespoons olive oil
  • A pinch of red chili pepper
  • A pinch of dried mint or oregano

Method

  1. In a mixing bowl, combine the dry dough ingredients and mix well, except for the yeast and sugar.
  2. Make a well in the center and add the yeast, sugar, and 1 cup warm milk (not hot). Stir and leave it in the center to activate the yeast.
  3. Then add the vinegar, buttermilk, and oil, and begin kneading until you get a soft, smooth, and cohesive dough.
  4. Let it rise for 1 hour, then start working with it.
    Timers: 60 min
  5. After the dough has risen, divide it, roll it out, and fill it with the cheese filling after mixing the crumbled feta by hand or with a fork with the other ingredients.
  6. Shape the pieces again into balls and arrange them side by side in an oiled baking tray.
  7. Cover and let rest for a short time.
  8. Brush the top with liquid milk or sprinkle with water, then place in a hot oven until golden brown.
  9. Remove from the oven after browning and cover immediately with a clean kitchen towel to keep the honeycomb buns soft. Cover for 15 minutes.
    Timers: 15 min
  10. Serve the feta cheese honeycomb buns immediately.
