Method
- Mix the sugar, grated carrot, oil, and lemon zest until the sugar dissolves. Add the flour and baking powder, then the milk, and knead until you have a firm dough.
- Roll the dough out on a clean surface and cut into your preferred shapes. Place the pieces on parchment paper on a baking tray and bake in a preheated oven at 180°C (350°F) for 15 minutes.
- When the carrot cookies have cooled, dust them with powdered sugar and serve.
