  • 1 cup grated carrot
  • 1/2 small cup vegetable oil
  • 3 teaspoons baking powder
  • 1/2 teaspoon vanilla
  • Zest of 1 lemon
  • A pinch of salt
  • 1 tablespoon vinegar
  • 1 teaspoon baking soda
