Ingredients
- Ice cream biscuits (biscotti)
- 113 g butter (1/2 cup)
- 1 cup sifted powdered sugar
- 1 1/2 cups sifted cake flour
- 3 eggs
- 1/2 cup milk
- Vanilla
- 2 tbsp cocoa powder — optional

Method
- Place the butter in the mixer and begin beating.
- Start adding the sugar gradually while continuing to beat until the mixture is pale yellow.
- Add the egg yolks one at a time, add the vanilla, and beat.
- Begin adding the flour, milk, and cocoa gradually until all is used, beating as you add each portion.
- Beat the egg whites in a separate bowl until you obtain a thick white mixture.
- Add the beaten egg whites to the first mixture and fold with a spoon until combined.
- Spoon a little of the cake batter into the ice cream biscuit shells until each is three-quarters full.
- Place the ice cream biscuit cakes in the oven tray standing upright.
- Put them in the oven on the middle rack at 180°C for 25 minutes.
- When you remove the ice cream biscuit cakes, prick each one from bottom to top with a thin wooden skewer to let steam escape — this prevents the biscuit shells from becoming soggy from steam.
- For serving, after the cakes have completely cooled, decorate with ice cream or whipped cream.
