Butter-Free Croissant

- 1 kg all-purpose flour
- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 1 tablespoon yeast
- 1 tablespoon baking powder
- Pinch of salt
- 1 tablespoon vinegar
- A dash of vanilla
- 2 tablespoons sugar
- 1 cup cornstarch for rolling the dough

Method
- Place the yeast with the sugar and milk in a deep bowl and mix well.
- Add the flour, egg and vanilla while continuing to mix.
- Also add at this stage the salt and oil and continue kneading well, adding water as needed for the dough.
- Cut the dough into 8 pieces and dust the pieces with cornstarch; roll each piece out individually, sprinkling with cornstarch. You will get a stack of dough; then place the eight pieces on top of each other and roll them together.
- Cut the loaf into triangles as you would a pizza and fill each triangle as desired—za'atar, cheese or chocolate. Roll each triangle into a crescent or croissant shape.
- Let the croissant pieces rest for about two hours or more. The longer the dough proofs, the better the result.
- Bake the croissants in a preheated oven for about 20 minutes until well browned. You can brush the tops with egg wash or with sugar syrup (jalab) according to preference.Timers: 20 min
