  • 1 kg all-purpose flour
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tablespoon yeast
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 tablespoon vinegar
  • A dash of vanilla
  • 2 tablespoons sugar
  • 1 cup cornstarch for rolling the dough

Method

  1. Place the yeast with the sugar and milk in a deep bowl and mix well.
  2. Add the flour, egg and vanilla while continuing to mix.
  3. Also add at this stage the salt and oil and continue kneading well, adding water as needed for the dough.
  4. Cut the dough into 8 pieces and dust the pieces with cornstarch; roll each piece out individually, sprinkling with cornstarch. You will get a stack of dough; then place the eight pieces on top of each other and roll them together.
  5. Cut the loaf into triangles as you would a pizza and fill each triangle as desired—za'atar, cheese or chocolate. Roll each triangle into a crescent or croissant shape.
  6. Let the croissant pieces rest for about two hours or more. The longer the dough proofs, the better the result.
  7. Bake the croissants in a preheated oven for about 20 minutes until well browned. You can brush the tops with egg wash or with sugar syrup (jalab) according to preference.
