Bulgur with vegetables — a very light, very healthy meal.
Ingredients
- 1 cup carrots
- 1 cup peas
- 2 cups coarse bulgur, washed and soaked in warm water
- 2 tbsp tomato paste
- 1/2 tsp curry powder
- 1/2 tsp ground black pepper
- 4 tbsp olive oil
- 1/2 tsp chili powder or to taste
- Juice of 1 lemon

Method
- Boil the peas and carrots until tender, then drain and set aside.
- In a bowl, mix the tomato paste, spices, salt and olive oil with the drained, soaked bulgur.
- Stir well, then add the mixture to the cooked peas and carrots. Transfer everything to a pot.
- Add 1/2 cup warm water over the top and place on the stove. When it comes to a boil, reduce the heat and cover the pot.
- Simmer the bulgur with vegetables over low heat for about 20 minutes or until cooked.Timers: 20 min
- Serve the bulgur with vegetables hot, alongside plain yogurt.
