Bulgur with vegetables — a very light, very healthy meal.

Ingredients

  • 1 cup carrots
  • 1 cup peas
  • 2 cups coarse bulgur, washed and soaked in warm water
  • 2 tbsp tomato paste
  • 1/2 tsp curry powder
  • 1/2 tsp ground black pepper
  • 4 tbsp olive oil
  • 1/2 tsp chili powder or to taste
  • Juice of 1 lemon

Method

  1. Boil the peas and carrots until tender, then drain and set aside.
  2. In a bowl, mix the tomato paste, spices, salt and olive oil with the drained, soaked bulgur.
  3. Stir well, then add the mixture to the cooked peas and carrots. Transfer everything to a pot.
  4. Add 1/2 cup warm water over the top and place on the stove. When it comes to a boil, reduce the heat and cover the pot.
  5. Simmer the bulgur with vegetables over low heat for about 20 minutes or until cooked.
    Timers: 20 min
  6. Serve the bulgur with vegetables hot, alongside plain yogurt.
