Bulgur with tomato... a healthy and nutritious vegetarian dish
Ingredients
- 4 dry onions
- sweet green bell pepper
- quarter cup olive oil with vegetable oil
- salt
- a pinch of seven-spice blend
- 2 tomatoes
- 1 kg coarse white bulgur
- 8 cups or 2 liters water
- 5 tablespoons tomato paste
- 1 cup cooked chickpeas

Method
- Finely chop the onions and sauté them in the oil with a pinch of salt and spice until they soften.
- When they soften, add the bell pepper cut into small cubes and stir briefly.
- Add the tomato paste and the finely chopped tomatoes with a pinch of salt, then add the chickpeas and stir.
- After a few minutes of stirring, add the water and let them simmer for half an hour over low heat.
- After half an hour, add the coarse bulgur, reduce the heat to low, cover the pot, and cook until the bulgur is done.
