Blueberry cake — a successful recipe for a light cake you will really enjoy
Ingredients
- Lemon zest
- 4 eggs
- A small pinch of salt
- 1 1/2 cups sugar
- 1 teaspoon liquid vanilla
- 1 cup milk
- 3/4 cup vegetable oil
- 2 teaspoons baking powder
- 3 cups sifted flour
- 1 cup blueberries
Method
- Place the lemon zest, eggs, salt, and vanilla in a mixer and beat well. Then add the sugar and beat thoroughly.
- Add the milk and oil and beat well. Then gradually add the sifted flour and beat again.
- Add the baking powder and beat, then add the cup of blueberries and fold the mixture gently.
- Pour the blueberry cake batter into a pan greased with oil or tahini.
- Place the pan in a preheated oven at 180°C (356°F) for about 50 minutes on the middle rack.Timers: 50 min
- Keep an eye on the cake while it bakes — it may need slightly less than 50 minutes depending on your oven.Timers: 50 min
- Test the cake with a small wooden skewer before removing it from the oven.
- Let it cool to room temperature and serve the blueberry cake.
