This recipe for making bitter orange jam, or aranj, takes a little time, but the result will be more than satisfying. Bitter orange, aranj, bu safir, or whatever you call it, this is a delicious jam worth trying.

- 1 kilo bitter orange
- 1/2 kilo sugar
- 1 teaspoon lemon salt
- 1 cup water
- Note: The name of bitter orange varies by country and region. In some countries it is called aranj, bu safir, or bitter lemon.
Method
- Grate the bitter orange peel with a grater
- Cut the bitter oranges lengthwise into 4 pieces
- Remove the pulp from each piece, then place the bitter orange pieces in water and leave them to soak for 3 days, changing the water from time to time until the bitter taste disappears from the oranges.
- After the required time has passed, place a pot over the heat and add the water and sugar ...when the sugar dissolves, add the bitter orange pieces on top of it ...and leave it to simmer slowly over low heat for 2 hours, then remove the pieces ...Timers: 120 min
- Add the lemon salt and stir well until the mixture boils, then return the bitter orange pieces ..leave them to boil for 10 minutes ....then remove the bitter orange pieces from the syrup and leave them to coolTimers: 10 min
