Ingredients
- 2 eggs
- 1 teaspoon vanilla
- 1 cup golden or brown raisins, according to availability and preference
- ½ cup sugar
- ½ cup vegetable oil
- 3 ripe bananas
- ¼ cup plain yogurt
- A pinch of salt
- 3 cups flour
- A small pinch of baking soda
- ½ teaspoon baking powder
Method
- Before starting the cake, preheat the oven long enough and wash the raisins, leaving them soaked in water.
- Beat the eggs and vanilla for several minutes, then gradually add the sugar and oil while continuing to beat.
- Mash the ripe bananas and mix them with the yogurt, then add them to the egg mixture.
- Gradually add the flour, bicarbonate of soda, and baking powder to the mixture, and stir with a wooden spoon.
- Add the plump raisins after draining and drying them, and fold in gently.
- Pour the banana cake batter into a baking pan or cake tin lightly greased with a little tahini.
- Bake the banana cake in the preheated oven at 180°C for about 45 minutes, or until the cake is fully cooked and has risen, depending on the oven.Timers: 45 min
