Traditional sfiha made with whole wheat flour and whole grain flour for a lighter, healthier dough. You’ll find all the details you need for a successful, soft dough and a tasty filling. You can use white flour if preferred.
Ingredients
- Dough:
- 2 cups whole wheat flour
- 2 cups whole grain flour
- 1 teaspoon salt
- 1 teaspoon yeast
- 2 tablespoons olive oil
- 2 tablespoons yogurt
- Warm water (as needed)
- Filling:
- 200 g finely ground beef
- 2 dried onions
- 2 tomatoes
- 1 hot pepper
- Salt
- 1 teaspoon black pepper
- 1 tablespoon pomegranate molasses
Method
- Mix all the dry dough ingredients
- Add the oil and warm water and knead until you get a smooth, soft, and tender dough
- Cover it with plastic wrap and a cloth on top for 2 hours, or until it rises (it will need more time if the weather is cold)Timers: 120 min
- Meanwhile, mix the filling ingredients and keep it in the fridge until using
- Drain off any excess liquid before using
- Once the dough has risen, roll it out on a clean surface until thin (as desired), then cut it into the desired size and shape
- Fill the dough pieces with the filling and close them into squares or boats (as shown in the picture)
- Arrange the sfiha on a baking tray greased with a little oil and bake at 200°C on the middle rack of the oven until cooked through and beautifully browned on the top and bottom
- Serve the sfiha hot with yogurt or laban
