  • 2 cups sifted flour with a pinch of salt
  • 1 cup sugar, or to taste
  • 1 cup liquid milk
  • 1/2 cup oil
  • 1 tablespoon baking powder
  • A pinch of vanilla
  • Orange zest or lemon zest
  • 1 tablespoon white vinegar - optional
  • Cream cheese triangles - cut each piece into two halves

Method

  1. Whisk the sugar, milk, and vanilla until the sugar dissolves using a mixer or by hand...
  2. Add the oil and orange or lemon zest, whisk a little, then add the sifted flour with the baking powder and a pinch of salt in batches
  3. Pour the batter into a pan greased with butter and dusted with flour, then place slices of cheese on top — each slice of cheese facing another slice
  4. Put the pan in a preheated oven at 180°C on the middle rack for about 30 minutes... or longer depending on your oven
  5. When the cake is done, remove it from the oven and brush the top with syrup (qatir) or sheera
