Ingredients

  • Firm, ripe red tomatoes (good quality)
  • Coarse salt
  • Black pepper (optional)
  • Olive oil

Method

  1. Wash the tomatoes well, remove the stem, then cut each tomato into 4 moon-shaped pieces and remove the seeds.
  2. Sprinkle each piece with coarse salt, then leave them in a colander until the next day.
  3. The next day, transfer the tomatoes from the colander to a white screen, i.e., a very thin white cotton cloth.
  4. Put them under direct sunlight for several days until the tomatoes are completely dry. You can also dry them in the oven: preheat the oven, then lower the temperature to the lowest setting and leave the tomatoes on a rack for 7 hours, but the color may change, so sun drying is preferable.

  5. After the tomatoes have dried and cooled, place them in a sterilized airtight glass jar and cover them with olive oil.
  6. Store the jars in a cool place.
