Ingredients
- Firm, ripe red tomatoes (good quality)
- Coarse salt
- Black pepper (optional)
- Olive oil

Method
- Wash the tomatoes well, remove the stem, then cut each tomato into 4 moon-shaped pieces and remove the seeds.
- Sprinkle each piece with coarse salt, then leave them in a colander until the next day.
- The next day, transfer the tomatoes from the colander to a white screen, i.e., a very thin white cotton cloth.
- Put them under direct sunlight for several days until the tomatoes are completely dry. You can also dry them in the oven: preheat the oven, then lower the temperature to the lowest setting and leave the tomatoes on a rack for 7 hours, but the color may change, so sun drying is preferable.Timers: 420 min
- After the tomatoes have dried and cooled, place them in a sterilized airtight glass jar and cover them with olive oil.
- Store the jars in a cool place.
