Ingredients

  • 1 1/2 cups water
  • 1 1/2 cups milk
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons yeast
  • 1 tablespoon orange blossom water

Method

  1. Mix the flour with the sugar, yeast, and baking powder, then start adding the milk and water and whisk with a hand whisk.
  2. Add the orange blossom water at the end, mix, and let the batter rest for 25 to 30 minutes.

  3. Heat a nonstick skillet over the stove without adding any oil.
  4. Take a little of the batter and pour it into the skillet in the shape of a circle.
  5. When the circle is full of bubbles on top and has turned golden from the bottom, it is done.
  6. Remove the circles from the skillet and place them on a clean kitchen towel.
  7. Fill the qatayef batter with ashta, cheese, or walnuts and sugar, as desired, and serve with cold syrup.
