Ingredients

  • Dough
  • 2 cups flour
  • 1 cup coarse flour (taheen 'farkha') or fine semolina
  • 2 tablespoons sugar
  • 1 packet baking powder or 2 teaspoons
  • a pinch of salt
  • 2 tablespoons cornstarch
  • 1 tablespoon orange blossom water
  • medium spoon of yeast
  • 4 cups water
  • Ashta (clotted cream) filling
  • 3 cups liquid milk
  • 1/2 cup flour
  • 3 tablespoons coarse flour (farkha)
  • 1 can clotted cream (Qeemar)
  • 1 tablespoon orange blossom water
  • Walnut filling
  • walnuts chopped with a knife
  • 2 tablespoons desiccated coconut
  • a pinch of cinnamon
  • medium spoon orange blossom water
  • 1 tablespoon sugar
  • Sugar syrup (Qater/Shira)
  • 2 cups sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • Garnish
  • crushed pistachios
  • lemon blossom (for garnish)

Method

Follow the cooking sequence without leaving the page.

  1. Beat all the qatayef dough ingredients together in an electric blender
  2. Let the batter rest for 15 minutes
    Timers: 15 min
  3. In a nonstick pan, pour in a little batter to form a round disc of the size you want, and cook it until all the bubbles appear on the surface and the underside turns lightly colored
  4. Continue the same process until all the batter is used up
  5. Place the qatayef on a cloth and cover them with another cloth as well
  6. Make the ashta filling: mix the liquid milk and flour while cold, then place them in a pot over the heat, stirring until the mixture thickens, then turn off the heat
  7. Add the qaimar on top and the orange blossom water and mix well, then let the ashta cool before filling
  8. Make the walnut filling: mix all the ingredients together
  9. Start filling and sealing the qatayef, then cover them with a cloth
  10. Fry the filled qatayef in plenty of oil until they turn golden, then transfer them from the oil to a strainer and drain for 5 minutes

  11. Dip the qatayef in the syrup, lift them out, and let them drain briefly
  12. Garnish the qatayef with pistachios and lemon blossoms, then serve
  13. Place the sugar, water, and lemon juice in a pot over the heat and let them boil for 8 minutes

  14. Add the orange blossom water and turn off the heat
  15. Let the syrup cool before using
