Wheat Harissa with Chicken
Wheat harissa (harisa) is very nourishing and delicious when cooked properly—mash the wheat grains while cooking. It goes well with chicken or meat.

Ingredients
Start here, then move straight into the method.
- 500 g hulled wheat
- Chicken (for boiling)
- Lemon peel and salt for poaching the chicken
- 350 g butter
- Salt to taste

Method
Follow the cooking sequence without leaving the page.
- Wash the wheat well then soak it overnight
- The next day, wash the wheat again and set it aside
- Wash the chicken then boil it with lemon peel and salt only, because strong spices change the harissa's flavor, so we do not use them
- When the chicken is cooked, lift it out of its broth and set it aside, then boil the hulled wheat in that broth
- Mash the wheat grains continuously during cooking using two spoons... place the grains between the spoons and press... repeat until fully cooked
- When the wheat is very well cooked add the boiled, de-boned chicken
- Melt the butter in a pan then add it over the harissa pot... add salt to taste and stir for just five minutes
- Serve the wheat harissa with chicken hot
