Ingredients
Start here, then move straight into the method.
- 1 kilo fresh green molokhia leaves
- 2 kilos ripe red tomatoes
- 1 kilo onions
- 1 large head of garlic
- Olive oil + vegetable oil
- 1 tablespoon sweet pepper molasses
- Hot pepper - optional
- 1 tablespoon paprika - optional

Method
Follow the cooking sequence without leaving the page.
- Wash the molokhia and drain it the day before (it's best to wash it ahead of time). Then spread it on a clean cloth and leave it outdoors in the air until it dries. This method is important to ensure the molokhia is dry when cooking and won't become slimy.
- Chop the onion into wedges and chop the garlic, then sauté them in a little oil.
- When the sauté softens without browning, add the finely chopped tomatoes and pepper molasses or pepper paste, paprika, and hot pepper, and stir.
- When the tomatoes are cooked, add the molokhia and stir for about ten minutes or a little longer until the molokhia is cooked.
