Bulgur Mafroukeh
Bulgur mafroukeh is a recipe very similar to tomato comnueh, the traditional dish from southern Lebanon. This recipe is vegetarian and healthy, and you can add chili or any type of vegetables as desired. It is best eaten with lettuce leaves rather than bread.
Ingredients

- 1/2 cup fine bulgur
- 2 tablespoons tomato paste
- 1 tablespoon red pepper paste
- 1 teaspoon salt
- 1/2 cup olive oil
- 1 tablespoon ground cumin
- 1/2 bunch parsley, chopped
- 1/2 bunch red cabbage, chopped
- 1/2 cup white cabbage, chopped
- 1/2 cup lettuce, chopped
- A few fresh mint leaves, chopped
- 1/2 cup radish, chopped
- 1/2 cup green onion, chopped
Method
Follow the cooking sequence without leaving the page.
- Rub the bulgur with the tomato paste and red pepper paste. Add the cumin and salt, then the oil, until the bulgur absorbs all the ingredients.
- Add the chopped vegetables: mint, parsley, green onion, lettuce, cabbage, and radish.
- Mix all the ingredients well with the bulgur. Add salt and olive oil to taste.
- Bulgur mafroukeh is eaten with lettuce or cabbage leaves.
