Green Fig Jam
Green fig jam made the traditional way, with all the secrets for making it successfully. This recipe gives enough ingredients for 1 kilo of figs, and you can increase the quantity as desired.

- 1 kilo green figs
- 300 g sugar
- 1/4 teaspoon citric acid
- Any kind of nuts, as desired: walnuts / sesame / almonds

Method
Follow the cooking sequence without leaving the page.
- Wash the figs, then remove the stems and cut each fig in half.
- Place the figs in a pot and sprinkle the sugar over them, then stir them a little.
- Put the pot directly on the heat. You can also leave them aside for a few hours until the figs release their juices; this is up to personal preference, but the result is the same.
- Stir the figs constantly. When they soften and dissolve, add the citric acid and continue stirring for another 10 minutes.Timers: 10 min
- Toast the nuts you want to add to the jam (if you want to use them - optional). Toast them only lightly, then add them to the jam after removing it from the heat and stir.
- Divide the jam into tightly sealed glass jars and close them immediately while still hot. You can also leave the jam in the pot until it cools slightly before pouring it into the jars, then wait until they cool completely before sealing the jars.
- After washing the figs, there is no need to dry them.
- Always use a wide pot when making jam, and make sure the jam fills only half the pot. This makes stirring and cooking easier.
- The jam must be stirred constantly while on the heat because it sticks easily to the pot, and it is best to use a wooden spoon for stirring.
- Keep the tightly sealed jam jars out of the refrigerator. After opening, they should be kept in the refrigerator.
