  • Eggplant, sliced lengthwise into strips
  • Vegetable oil
  • Finely ground meat
  • Finely chopped onion
  • 1/2 teaspoon mixed spices
  • 1/4 teaspoon sweet spice
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • A pinch of salt
  • Grated cheese
  • Tomato sauce ingredients:
  • 2 1/2 cups crushed tomatoes
  • 1 1/2 cups water
  • Black pepper and white pepper
  • Fresh or dried basil (according to availability)
  • 2 cloves crushed garlic
  • Finely chopped onion
  • 2 tablespoons olive oil
  • Sauce preparation method:
  • In a pan over the heat, add the oil and sauté the onion and garlic until they soften.

Method

  1. Start by sprinkling salt and black pepper over the eggplant slices, then brush them with oil...
  2. Grill the eggplant slices in the oven on both sides until browned. In a pan over medium heat, add 1 tablespoon of oil and fry the onion until translucent.
  3. Add the ground meat, then the salt, black pepper, mixed spices, cinnamon, and paprika.
  4. Place 2 tablespoons of the meat filling at one end of an eggplant slice, then roll it into a cylinder. Continue until all the eggplant slices and filling are used up. In a glass baking dish, pour a little tomato sauce, then arrange the eggplant rolls on top.
  5. Pour the remaining sauce over the eggplant, then add the grated cheese.
  6. Place the dish or glass baking pan, whichever is available and oven-safe, into the oven for about 20 minutes.

  8. Add the tomatoes and the sauce diluted with water, and leave the mixture over low heat for about 10 minutes until it comes to a boil and thickens...
