Fruit Jelly Cake

Fruit jelly cake — two layers of gelatin with a dry cake layer in the middle and fresh fruit set in the first jelly layer. A refreshing, unusual cake worth trying.

Ingredients

  • 2 eggs at room temperature
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 1/2 cups sifted flour
  • 1/2 cup oil
  • 1 tsp vanilla
  • 1 level tablespoon baking powder
  • Pinch of salt
  • 1 tsp vinegar
  • Gelatin (Jello)
  • 2 packets raspberry-flavored gelatin
  • 2 cups water
  • 1 tablespoon sugar
  • 2 bananas
  • 6 large strawberries

Method

Follow the cooking sequence without leaving the page.

  1. In a blender, begin preparing the dry cake: put all the liquids and beat well.
  2. Sift the baking powder and salt over the flour in a bowl and mix, then gradually add them to the liquid mixture and stir well with a spoon in one direction.
  3. Grease the pan with butter and dust with a little flour, then pour the cake batter into it; place the pan in an oven preheated for 10 minutes to 180°C.

  4. Place the pan on the middle rack of the oven for 15 minutes or a little longer depending on your oven.

  5. When the cake is done, turn off the oven and leave the pan in the oven for 5 minutes with the oven door open so the cake does not sink.

  6. Remove the pan and let the cake cool completely, then invert it onto a tray.
  7. Prepare the jelly: boil 1 cup of water, add the jelly powder and stir well, add the sugar and stir until dissolved.
  8. Turn off the heat and add the second cup of room-temperature water, then stir.
  9. Slice the bananas and strawberries and place them in the pan used for the cake; pour half of the jelly over the fruit and put the pan in the freezer for half an hour.
  10. After the time has passed, place the cake you set aside to cool on top of the jelly layer — i.e., return it to the pan so you have a jelly layer underneath and the dry cake on top.
  11. Pour the remaining jelly over the top and leave it in the refrigerator for 4 hours to set.

  12. After 4 hours, boil water and pour it into a tray, then place the pan in the hot boiling water for two minutes.
  13. Invert the fruit jelly cake onto a serving plate and serve.
