Fruit jelly cake — refreshing, distinctive, and out of the ordinary.

Ingredients:

2 eggs at room temperature

1/2 cup milk

1/2 cup sugar

1 1/2 cups sifted flour

1/2 cup oil

1 tsp vanilla

1 level tablespoon baking powder

Pinch of salt

1 tsp vinegar

Gelatin (Jello):

2 packets raspberry-flavored gelatin

2 cups water

1 tablespoon sugar

2 bananas

6 large strawberries

Method:

Using a mixer, prepare the dry cake layer: put all the liquid ingredients and beat well.
In a bowl, mix the baking powder and salt with the flour, then add them gradually to the liquid mixture and stir gently in one direction with a spoon.
Grease the pan with butter and dust with a little flour, then pour the cake batter into the pan. Preheat the oven to 180°C (350°F) about 10 minutes before baking.
Bake the cake on the middle rack for about 15 minutes or a little longer depending on your oven.
When the cake is done, turn off the oven and leave the pan inside for 5 minutes with the oven door open slightly so the cake doesn't sink.
Remove the pan and let the cake cool completely, then turn it out onto a serving tray.
Prepare the gelatin: boil 1 cup of water, add the gelatin powder and sugar and stir until dissolved.
Turn off the heat and add the second cup of water at room temperature, then stir.
Slice the bananas and strawberries and place them in the pan used for the cake. Pour half of the gelatin mixture over the fruit and place the pan in the freezer (or refrigerator) for about half an hour.
After that time, place the cooled cake on top of the gelatin layer (so you have a bottom gelatin layer with fruit, then the dry cake on top).
Pour the remaining gelatin over the cake and refrigerate for 4 hours to set the gelatin.
After 4 hours, heat some water and pour it into a tray. Place the cake pan in the hot water for two minutes.
Invert the fruit jelly cake onto your serving plate and serve.
