Banana Honey Banana with chocolate chips... this cake uses brown sugar and dark flour and relies on the sweetness of honey and banana to achieve a healthy cake standard

Ingredients

  • 1 1/2 cups mashed bananas or about 3 large bananas
  • 1 large egg
  • 1/3 cup yogurt
  • 2 tablespoons vegetable oil or coconut oil
  • 1/3 cup brown sugar
  • 1/4 cup syrup or honey
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups whole-wheat flour
  • 3/4 cup chocolate chips

Method

  1. In a bowl, mash the bananas, then add the egg and mix with a wooden spoon; then add the yogurt (you can use low-fat yogurt if you prefer).
  2. Add the oil to the cake mixture and mix well, then add the sugar, vanilla and honey and continue mixing. Add the baking soda, cinnamon and salt and mix.
  3. Finally add the flour, stir, then fold in the chocolate chips and mix well; place in a baking pan and sprinkle a few chocolate chips on top of the cake.
  4. Bake the banana, honey and chocolate chip cake in a preheated oven at 170°C for 40–50 minutes or until the cake is fully cooked, depending on your oven.
