Ingredients

  • 4 eggs.
  • 1 teaspoon vanilla
  • 1 teaspoon orange zest
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • 1/2 cup shredded coconut
  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 cup sugar
  • 2 tablespoons baking powder
  • Syrup (qater or shira) for soaking the Rwani
  • Which consists of
  • 1 and a half cups water
  • A few drops of lemon juice.
  • A dash of vanilla or a cinnamon stick or 1 tablespoon orange juice for flavoring
  • Use the flavoring as desired.

Method

  2. Preheat oven to 170°C. Butter and flour a cake pan.
  3. Beat eggs and orange zest with an electric mixer on medium speed for 5 minutes, then add sugar and vanilla and continue beating for another 5 minutes.

  4. Add oil while continuing to mix, then add orange juice.
  5. Mix flour, cake flour, and baking powder with shredded coconut.
  6. Fold the dry ingredients into the egg mixture gradually with a wooden spoon or spatula.
  7. Pour the batter into the prepared pan and bake for 40–45 minutes, or until done. Do not open the oven early.

  8. To make the syrup, combine water and sugar in a small pan, add lemon juice and boil for 7–10 minutes. If using a cinnamon stick, add it with the sugar and water from the start.

  9. When the cake is done, remove from the oven and spoon the warm syrup over it, then decorate as desired.
