Coconut Cake with Condensed Milk

Ingredients
Start here, then move straight into the method.
- 1 cup flour
- 1 cup coconut
- 1/2 cup sugar
- 1/2 cup oil
- 1/2 cup milk
- 3 eggs
- 1 very small teaspoon vanilla
- 1 small teaspoon baking powder
- Lemon zest
- 1 tablespoon white vinegar
- Soaking the cake
- 1 cup sweetened condensed milk
- Top of the cake
- 1 cup toasted coconut flakes
Method
Follow the cooking sequence without leaving the page.
- Whisk the eggs with the sugar, vanilla, and lemon zest...
- Add the milk, oil, and vinegar... and continue whisking
- Add the coconut flakes, flour, and baking powder, and whisk until the mixture is well combined
- Grease a baking pan with tahini or a little oil, then dust it with flour and pour in the cake batter
- Place the pan in a preheated oven at 180°C for half an hour
- When the cake is done, remove it from the oven and start piercing the surface with a skewer or a small wooden stick... make many holes
- Pour the sweetened condensed milk over it while it is hot so it absorbs it
- Toast the coconut flakes in a skillet until golden brown, then spread them over the cake
- Let it cool well at room temperature before serving
