Clementine Cake — very easy. This is a classic cake where milk is replaced by clementine juice for a beautiful color and flavor.

Ingredients

  • 5 eggs
  • 1 teaspoon vanilla
  • Zest of clementines
  • 2 cups sugar
  • 1 cup clementine juice
  • 1/2 cup oil
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • Pinch of salt

Method

  1. Beat the eggs with the vanilla and clementine zest.
  2. Add the sugar and beat until the mixture is pale and thick.
  3. Add the oil and beat, then add the clementine juice and beat again.
  4. Add the flour with the baking powder and salt and fold gently from bottom to top with a spoon.
  5. Place the clementine cake batter in a buttered pan lightly dusted with flour.
  6. Put the pan into the oven at 160°C for about 45 minutes.
    Timers: 45 min
  7. After the time has passed, test the clementine cake with a small wooden skewer, and let it cool completely at room temperature before serving.
