How to Make Meat Kabsa?

Ingredients
- 1 kg beef, cut into pieces suitable for kabsa
- 3 cups basmati or long-grain rice
- 2 large carrots
- 2 green bell peppers
- 1 hot chili pepper (or to taste)
- 1 cup corn kernels
- 2 large tomatoes
- 1 small onion
- 1 tbsp kabsa spice mix
- 1 tsp dried coriander
- A pinch of ground white pepper
- Tomato salad:
- Grated/crushed tomato
- 1 crushed garlic clove
- Chopped hot chili pepper
- Salt

Method
- Boil the meat with aromatics (bay leaves, cinnamon sticks, cloves, ginger, etc.)... skim off the scum in the first stage, replace with clean water and let it boil.. after the water boils reduce the heat and let the meat simmer on low heat until fully cooked
- Peel and grate the carrots, cut the peppers into small cubes, grate the tomatoes, and chop or grate the onion.. set the vegetables aside
- Wash the rice and drain it
- In a pot over the heat... add a little oil and sauté the onion until softened, then add the peppers and carrots and stir, then the corn and finally the grated tomatoes and cook until softened
- Add the spices and dried coriander and sauté briefly over low heat
- Then add the rice and fold gently, then cover with the meat cooking liquid and stir lightly
- When the water boils.. reduce the heat, cover the pot, and leave the kabsa to cook on low heat until done
- Transfer the rice to a wide serving platter.. arrange the boiled meat on top
- Serve the kabsa with yogurt or tomato salad
