Ingredients
- For the dough:
- 1 kilo flour
- 2 tablespoons yeast
- 2 tablespoons sugar
- 2 tablespoons butter
- 3/4 cup yogurt
- 1/2 cup olive oil
- Lukewarm water for kneading
- For the filling:
- 1 kilo finely ground meat
- 6 ripe red tomatoes
- 5 medium onions
- Salt
- 1 teaspoon cinnamon
- 1 teaspoon seven-spice blend
- A pinch of white pepper
- 1 tablespoon sweet pepper molasses
- 1 teaspoon hot red chili powder - optional
- 1 tablespoon ghee
- A pinch of oil

Method
- We start by preparing the dough... mix the flour, yeast, and sugar.
- Add the butter, oil, and yogurt on top, then rub well until the flour absorbs these ingredients.
- Add the lukewarm water and knead... add the water gradually, of course, and keep kneading until you get a soft, tender dough.
- Lightly grease a bowl with a little olive oil, place the dough in the bowl, cover it with plastic wrap, and let it rise for about an hour in a warm place.
- After the dough has risen, divide it or shape it into small balls, or whatever size you want, and let them rest for another 10 minutes.Timers: 10 min
- Roll out or stretch the dough balls and place them on a cloth so they don't stick to the surface underneath...
- Spread the filling inside the dough circles, then arrange them on a tray greased with oil.
- Bake the lahm bi ajeen in the oven until the dough is browned on the bottom... you can brown the top too... and serve it hot.
- When it has drained well, add the spices, salt, and the rest of the ingredients and mix the filling.
- Prepare the filling... grind the onion and tomatoes in an electric machine and mix them with the meat, then place the meat in a strainer to get rid of any excess liquid.
