Chocolate Mint Cookies

Ingredients

  • 1 1/4 cups sugar
  • 2 cups all-purpose flour
  • 1 egg
  • 1 tablespoon fresh mint, finely chopped
  • 3/4 cup softened butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 2 tablespoons chocolate chips

Method

Follow the cooking sequence without leaving the page.

  1. Cream the softened (or melted) butter with the sugar until light, using a whisk by hand or an electric mixer.
  2. Add the egg and continue beating until fully combined.
  3. Stir in the finely chopped fresh mint and mix into the batter.
  4. Gradually add the flour, baking soda and salt.
  5. Mix with a wooden spoon, then fold in the chocolate chips until the dough is uniform.
  6. Scoop about one tablespoon of dough onto a baking tray lined with parchment paper or lightly sprayed with oil.
  7. Leave enough space between cookies as they will spread while baking.
  8. Place the tray in a preheated oven and bake the cookies for about 10 minutes.

  9. When you remove the cookies from the oven they will be very soft—let them sit for a few minutes to firm up and cool before transferring them from the tray.
