Potato Kunafa

- 1 kg potatoes
- 2 cups flour
- a slab of butter
- a pinch of vanilla
- 2 tablespoons rose water
- crushed cookies
Method
- Boil the potatoes and mash them, then add the butter. Knead the potatoes and butter well, then gradually add the flour until you get a smooth dough. Sprinkle vanilla and rose water over the dough.
- Grease a baking pan with a little butter, spread in the potato mixture, and top with crushed cookies.
- Place the pan in a preheated oven.
- When the potato mixture turns golden, remove from the oven and pour syrup over it while it’s still hot.
- Potato kunafa can be served hot or cooled, to taste.
