Ingredients

  • 1 kg potatoes
  • 2 cups flour
  • a slab of butter
  • a pinch of vanilla
  • 2 tablespoons rose water
  • crushed cookies

Method

  1. Boil the potatoes and mash them, then add the butter. Knead the potatoes and butter well, then gradually add the flour until you get a smooth dough. Sprinkle vanilla and rose water over the dough.
  2. Grease a baking pan with a little butter, spread in the potato mixture, and top with crushed cookies.
  3. Place the pan in a preheated oven.
  4. When the potato mixture turns golden, remove from the oven and pour syrup over it while it’s still hot.
  5. Potato kunafa can be served hot or cooled, to taste.
