Ingredients

  • 2 eggs at room temperature
  • 1 teaspoon vinegar
  • 1½ (170 g) containers plain yogurt
  • Cream cheese (amount as desired)
  • ½ cup oil
  • 2 cups plus 3 teaspoons all-purpose flour
  • Sweet akkawi cheese, cut into cubes
  • Paprika or sweet red pepper powder
  • Sliced olives
  • Dried za'atar
  • Za'atar or grated cheese for topping

Method

Follow the cooking sequence without leaving the page.

  1. Beat the eggs with the vinegar, then add the yogurt, cream cheese and oil and continue beating
  2. Sift the flour and add it in batches, folding with a spoon from bottom to top
  3. Add the cubes of cheese, paprika, olives and za'atar and stir with a spoon
  4. Spoon the mixture into silicone or metal cupcake molds greased with oil or other available fat
  5. Sprinkle the tops with za'atar or grated cheese then bake at 170°C until cooked
  6. Test with small wooden skewers to make sure they are done, then let them cool and serve
