Ingredients

Start here, then move straight into the method.

  • 2 cups fine white bulgur
  • 1 kg pumpkin
  • 2 cups chopped spinach
  • 200 grams walnuts
  • 4 large onions, sliced
  • 1 tablespoon ground sumac
  • 1 teaspoon ground cumin
  • a pinch of black pepper
  • a pinch of ground hot pepper
  • sour pomegranate seeds (optional)
  • salt
  • vegetable oil

Method

Follow the cooking sequence without leaving the page.

  1. Cut the pumpkin after peeling it and cook it sautéed or steamed
  2. Soak the bulgur with the hot, cooked pumpkin pieces for one hour
  3. After the time has passed.. sprinkle salt and spices over them and rub with your hands to obtain a dough.. do not add water
  4. Meanwhile, in a frying pan sauté the sliced onions in oil until soft, then add the walnuts and stir
  5. Add the spinach with a pinch of black pepper and sauté
  6. When the water from the spinach evaporates turn off the heat and add sumac and sour pomegranate seeds and mix
  7. Prepare the baking tray.. spread vegetable oil over the entire tray
  8. Divide the pumpkin dough into two portions then spread the first layer... making it thin
  9. Distribute the filling evenly then spread the second layer... dip your hands lightly in water to help spread the dough without cracking
  10. Cut it as desired and drizzle vegetable oil over it then put it in the oven at 200°C to bake
  11. Brown the top of the pumpkin kibbeh then serve it hot
