Qamar al-Din or Qamar Over the Clouds
Qamar al-Din Over the Clouds is a well-known Lebanese dessert, especially in Tripoli. This recipe blends a milk-based pudding with qamar al-din for a delicious, easy dessert.
Ingredients

- Qamar al-Din mixture
- 1 sheet of qamar al-din
- 1 cup sugar
- 3 cups water
- 5 tablespoons cornstarch
- 2 teaspoons rose water
- Milk pudding mixture
- 1 large can sweetened condensed milk
- 1 cup water
- 6 tablespoons cornstarch
- 2 tablespoons rose water
- Garnish
- Nuts as available, raisins, shredded coconut...
Method

- Prepare the muhallabieh and the qamar al-din separately. Prepare the qamar al-din first by soaking it in hot water until soft; you can soak it in water the night before preparing it
- Mix the qamar al-din with a little cornstarch while cold first, then place it over very low heat with water until it dissolves completely and its texture resembles muhallabieh. Stir constantly so it doesn't clump or stick
- Mix the muhallabieh ingredients in a second pot and also cook over low heat with constant stirring so it doesn't stick or clump, until you have a slightly thick and set mixture
- When both mixtures are ready, prepare a glass or serving cups, place a layer of muhallabieh first and then a layer of qamar al-din. Garnish the cups with grated coconut, ground pistachios or any nuts you have available
