Qatayef Without Semolina
A tried-and-tested, very delicious qatayef recipe without semolina. You can choose the filling you prefer: ashta, pistachios, or walnuts with sugar.
Ingredients

- 2 cups white flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 tablespoon instant yeast
- 2 1/2 cups water
- a pinch of salt

- 8 tablespoons cornstarch
- 1 teaspoon rose water and orange blossom water

Method

- Mix all the ingredients well in a bowl.
- Let the batter rise for 2 hours.Timers: 120 min
- Heat a nonstick pan and pour a little of the batter in medium-sized circles into the pan. When the circles are cooked and browned from the bottom, remove them and arrange them on a dry cloth or tray to cool completely.
- Decorate the qatayef with ground pistachios and lemon blossom, and pour the cold syrup over them.
- Place the ingredients over medium heat until they boil. When the mixture boils, reduce the heat and stir until you have a fairly thick mixture. Set the ashta aside and let it cool before using it as a filling for the qatayef.
- Place the sugar and water over the heat until the mixture boils. When it boils, add the rose water and orange blossom water and wait a few minutes. Add the lemon juice, then turn off the heat when it becomes somewhat thick.
