Green Fava Beans with Yogurt
Green fava beans with goat yogurt are a healthy, nourishing dish. This is a well-known recipe in traditional Lebanese cuisine and is suitable for children, especially after a long day at school.

- 1½ kg goat yogurt
- 1 kg green fava beans
- 1½ weqiyah lamb shank, cut
- 5 cloves garlic, crushed
- Half a bunch fresh cilantro
- Vegetable oil
- Salt
- Bay leaves, cinnamon sticks, an onion cut in half for boiling the meat
Method
- Place the meat with a little vegetable oil over the heat, brown the meat a little, then add water; when it boils and scum appears remove it, then add all the seasonings, cover the pot and let the meat cook well.
- In another pot prepare the green fava beans, remove the pods and keep them, wash the beans, then add them to the meat and let the mixture boil, then reduce the heat until the fava beans are cooked.
- Put the yogurt in a pot over the heat and let it boil for about 10 minutes, then add the pieces of meat and the fava beans to it and let the mixture boil again for another 10 minutes; add salt to the yogurt to taste.Timers: 10 min
- Fry the cilantro with the garlic in some ghee briefly and add part of it over the yogurt mixture, leaving some for garnish.
- You can also garnish the dish with fried pine nuts.
- Serve the green fava beans with yogurt alongside white rice.
