Cinnamon Apple Pie

Ingredients
Start here, then move straight into the method.
- Dough
- 2 1/4 cups flour
- 1 cup butter
- 1/4 cup sugar
- a small pinch of salt
- 1 teaspoon ground cinnamon
- 1/4 cup cold water
- Filling
- 4 to 5 apples
- 2 teaspoons ground cinnamon
- 2 tablespoons sugar
- 1 tablespoon butter
- a pinch of nutmeg (optional)
- Salam Hijazi (Umm Hadi)

Method
Follow the cooking sequence without leaving the page.
- Mix the flour, butter and cinnamon in a deep bowl and rub the ingredients together.
- Dissolve the sugar and salt in 1/4 cup water until dissolved.
- Add the liquid to the butter-and-flour mixture and stir lightly—do not over-knead.
- Gather the dough, then chill it in the freezer for 15–30 minutes.Timers: 30 min
- Meanwhile prepare the filling: put the peeled, sliced apples with the sugar, butter and cinnamon in a non-stick pan.
- Cook over low heat until the sugar melts.
- Remove the dough from the fridge and knead slightly until it becomes cohesive and pliable.
- Reserve a little dough for the top. Roll out the rest with a rolling pin and line an ungreased baking dish, lifting the edges up the sides.
- Spread the cooled apple filling over the dough.
- Roll out the reserved dough as a top layer and place it over the filling.
- Bake the cinnamon apple pie in a preheated oven at 180°C (350°F).
- When the pie is cooked, brown it a little.
- Let it cool slightly, then cut and serve.
