Swiss Chard Pies

Swiss chard pies... who wants to try them? They are just as delicious as spinach pies! Here is this delicious method for making the dough and filling.

Ingredients

Start here, then move straight into the method.

  • 1 kilo flour
  • 2 tablespoons sugar
  • 2 tablespoons yeast
  • 2 tablespoons vinegar
  • A pinch of salt
  • 1/2 cup oil
  • 3 tablespoons powdered milk
  • 2 tablespoons yogurt
  • 2 cups lukewarm water, or as needed for the flour
  • Note: This dough is used for various pastries.
  • Filling
  • 2 kilos Swiss chard
  • 3 large onions
  • 1 tablespoon sweet pepper paste
  • 2 tablespoons sumac
  • 1/2 teaspoon seven-spice blend
  • 1/2 teaspoon cumin
  • Salt
  • Oil
  • Olive oil, for brushing the pies after baking

Method

Follow the cooking sequence without leaving the page.

  1. We start by making the dough. Mix all the dry ingredients, then add the vinegar and oil and rub with your hands.
  2. Add the water gradually and knead well until you get a smooth, soft dough.
  3. Wrap the dough with plastic wrap, then cover it with a cloth.
  4. Let it rest for at least an hour until it rises well.
  5. Meanwhile, prepare the filling. Take the Swiss chard leaves, wash them well, then chop them finely.
  6. Put them in a pot over the heat on their own until they release their water.
  7. Discard the water, drain them, and squeeze them well.
  8. In a pan, place the finely chopped onion and stir over the heat with a splash of oil until softened.
  9. Add the Swiss chard, well squeezed, to the pan with the onion, along with the rest of the ingredients except the sumac. Stir, then turn off the heat.
  10. When the filling has cooled, add the sumac and stir.
  11. Once the dough has risen, pinch it into portions, roll it out, cut it, and fill the pies.
  12. Bake the Swiss chard pies in a hot oven until browned.
  13. Brush them with olive oil as soon as they come out of the oven and serve.
