Whole-Wheat Cheese Puffs

Ingredients

  • 5 cups whole wheat flour
  • 2 tbsp powdered milk
  • 2 tbsp active dry yeast
  • 2 tbsp sugar
  • pinch of salt
  • 1/2 cup vegetable oil
  • 2 cups warm water
  • 2 cups mozzarella cheese
  • 1 cup feta cheese
  • 1 tbsp black seed (nigella) or nigella seeds
  • sesame seeds, optional

Method

Follow the cooking sequence without leaving the page.

  1. Start by preparing the dough. In a deep bowl, mix the yeast, sugar and warm water. Stir until the yeast dissolves a little, then add 2 cups of flour and the salt. Let the mixture rest for a few minutes.
  2. After a short rest, add the remaining flour to the dough mixture.
  3. Add the powdered milk and oil, and knead well until you have a smooth, cohesive dough.
  4. Cover the dough and set it aside while you prepare the cheese filling.
  5. Mix the mozzarella and feta with the nigella seeds. You can add sesame if you like.
  6. Roll the dough out on a flat surface. Cut into circles. Place a spoonful of filling in each circle and seal both the top and bottom edges well to form a boat shape.
  7. Bake the cheese puffs in a preheated oven at 180°C (356°F) for about 12 minutes, or until cooked and lightly browned — oven times may vary.
