Freekeh with Chicken
Freekeh with chicken is a delicious dish prepared like bulgur or rice but it needs more water and longer cooking time. Freekeh is nutritious and tasty with chicken or lamb.

Ingredients

- 1 kg freekeh
- chicken thighs
- 1 onion
- seasonings for boiling the chicken
- ghee or butter
- salt to taste

Method
Follow the cooking sequence without leaving the page.
- Clean the chicken well and wash it, then boil it with aromatics; remove the scum that appears on the surface when it boils — either skim off the scum or discard the water after the scum appears — then wash the thighs well, submerge them in fresh water, and boil them with aromatics
- In a pot, place the finely chopped onion with the ghee and sauté until softened
- Add the well-washed, drained freekeh and adjust the salt; stir with the onion so the freekeh absorbs the ghee
- Add the chicken stock so it covers the freekeh and rises about 2 cm above it
- Reduce the heat, cover the pot, and let the freekeh cook for about half an hour on low heat; check the grains during cooking by uncovering the pot and add chicken stock whenever the freekeh needs it
- Transfer the freekeh to a serving dish and arrange the chicken with fried nuts on top
