Stuffed Chicken with Rice

Ingredients

  • Whole chicken, about 2 kg (preferably chilled in the fridge a day before)
  • 1 large cup long-grain American rice
  • 300 g lean minced meat
  • Salt
  • 1/2 teaspoon sweet spice mix (bahar halu)
  • 1/4 teaspoon ground cinnamon
  • Whole cloves
  • Nutmeg
  • A pinch of ground cumin
  • A pinch of tandoori spice
  • A pinch of saffron
  • A pinch of ground cardamom
  • Raisins or almonds or pine nuts
  • Vegetable oil
  • 2 cups water

Method

Follow the cooking sequence without leaving the page.

  1. First, wash the chicken, then rub it with seasonings: pieces of lemon, ginger, garlic, salt, and a pinch of flour.
  2. Wash and drain the chicken, then rub it with a little salt.
  3. Place the stuffed chicken in a nonstick pot with a little vegetable oil, cover the pot, and let it cook for half an hour in its own steam.
  4. Meanwhile, cook the rice. Sauté the meat in a little vegetable oil, then add the spices and stir, then add the rice and the water. When the water boils and reaches the level of the rice, reduce the heat, cover the pot, and leave the rice on low heat to cook.
  5. When the rice is cooked, stuff the chicken with as much as it can hold and secure it with wooden skewers.
  6. Preheat the oven. Place the stuffed chicken in a roasting pan and pour in the juices that collected while it was cooking in the pot during the first stage.
  7. Start by roasting with both top and bottom heat for the first half hour, until it is browned, then roast for an additional quarter hour using only the top heat. While it's browning, baste it with the broth from time to time until the browning is complete.
  8. Serve the stuffed chicken with the remaining fluffed rice from the pot, and garnish with fried nuts as desired.
